Ingredients

  • 1 pkg. chicken-rice prepared mixture
  • 1 large jar marinated artichokes, drained (reserve marinade)
  • 1/3 c. mayonnaise
  • 1/4 tsp. curry powder
  • 12 black olives, sliced thin
  • 1 can water chestnuts, chopped
  • 1/2 bunch scallions, chopped

Method

  • Prepare chicken-rice mixture according to package directions. Set aside.
  • Mix reserved marinade, curry and mayonnaise.
  • Add to rice with all other ingredients.
  • Chill overnight.
  • Serve on bed of lettuce with tomato garnish.
