Ingredients

  • 2 lbs fresh mushrooms
  • 1 (6 ounce) package chicken stove top stuffing mix
  • 1 cup beef broth
  • 12 cup butter
  • cooking spray

Method

  • Preheat oven to 350* degrees.
  • Pull the stems out of the mushrooms; then clean mushroom caps and stems in cold water and let drain in strainer.
  • Place caps on a paper towel and dice stems.
  • In microwave proof mixing bowl, add stuffing mix, diced stems and beef broth.
  • Stir until broth is incorporated throughout.
  • Place in microwave on high for 2 minutes.
  • Then add the stick of butter and microwave until butter is almost completely melted about 1 minute.
  • Remove from microwave and stir until butter is completely mixed through.
  • Lightly spray a large cookie sheet with cooking spray, taking a spoon over fill each mushroom cap until each one has a nice dome on top.
  • Place in oven and bake for 20 to 30 minutes depending on the size of the mushrooms and your oven.
  • When done let them cool for about 5 minutes on the cookie sheet before placing the mushrooms on the serving tray.
