Ingredients

  • 3 Tbsp. butter
  • 1 1/2 tsp. curry
  • 1/4 c. cream
  • 1/4 c. bread flour
  • 2 c. diced chicken
  • 1/2 tsp. pepper
  • 1 1/2 c. chopped onion
  • 3 Tbsp. rice
  • 1 1/2 c. apples, peeled and diced
  • 3 qt. chicken stock
  • 1/2 Tbsp. salt

Method

  • Saute onions in butter.
  • Add apples and cook 10 minutes. Combine flour and curry.
  • Add to onion mixture.
  • Stir in chicken stock slowly.
  • Cook until smooth and thick.
  • Add rice and boil for 20 minutes.
  • Add chicken, cream and seasonings.
  • Makes 1 gallon.
