Ingredients

  • 8 medium potatoes, cooked with peeling on, peeled and cut into slices
  • 1 can cream of mushroom soup
  • 1/4 tsp. salt
  • 2 c. sour cream
  • 1/4 tsp. pepper
  • 8 fresh green onions, chopped (tops and all)
  • 2 c. grated Cheddar cheese
  • 1 stick oleo or butter

Method

  • Melt butter in saucepan and add soup; blend until smooth. Remove from heat and add sour cream, salt, pepper, onions and 1 cup cheese.
  • Put potatoes and sauce in baking dish.
  • Sprinkle other cup of cheese on top.
  • You can also sprinkle parsley on top.
  • Bake 30 minutes at 350°.
  • Can be made day before use.
  • Tastes like baked potato with all the trimmings.
