Ingredients

  • 1 bag Pancake mix
  • 1 Egg
  • 100 ml Milk
  • 3 tbsp Plain yoghurt

Method

  • Place the egg, milk and yoghurt in a bowl.
  • Mix well with a whisk.
  • Pour the pancake mix into the bowl.
  • This is the important bit!!
  • Use your whisk to scoop up the mixture and drop it by shaking the whisk several times.
  • Scoop up the mixture and drop.
  • Repeat this about 10-15 times.
  • You will have a thick batter (it looks like miso).
  • Fry the batter as usual.
  • (I use a non-stick frying pan and fry over a very low heat without oil.)
  • When the batter starts to bubble, flip it over.
  • You can see the batter is swelling nicely.
  • You will have a thick pancake.
  • You can make a prosciutto sandwich with it as in this photo.
