Ingredients

  • 1 cup oil
  • 1 teaspoon mustard
  • 2 tablespoons vinegar
  • 1 salt
  • 1 pepper
  • 1 teaspoon honey
  • 1/2 teaspoon herbs basil, rosemary

Method

  • In a glass or bowl, beat together the oil and mustard with a fork until the oil has emulsified. Add the remaining ingredients, beat and pour over salad, vegetables, whatever.
  • *If you beat the oil and mustard together until they emulsify, the dressing will never separate. It will separate if you mix the oil and vinegar together first, and then the mustard. Easiest seen in a small food processor or spice mill.
