Ingredients
- 1 head broccoli
- 1/4 c. olive oil
- 1/4 tsp. dried hot pepper flakes
- 2 garlic cloves, slivered
- 1/2 c. pine nuts
- 1/2 c. raisins
- 2 large tomatoes, peeled, seeded and roughly chopped
- 1/2 tsp. salt
- 1/4 tsp. pepper
Method
- Cut the broccoli into florets. Trim and peel the stalks and cut into dime-size pieces. In a medium skillet, heat the oil with the pepper flakes and garlic. Add the pine nuts and raisins; saute until the nuts begin to color, about 2 minutes. Add the broccoli and saute until tender, about 5 minutes. Add the tomatoes and cook until just heated through, about 1 minute. Season with salt and pepper. Makes 4 to 6 servings.
