Ingredients
- 1/4 c. white vinegar
- 2 Tbsp. honey
- 2 Tbsp. peanut oil
- 10 cloves garlic, chopped
- 3 Tbsp. soy sauce
- 1/4 tsp. powdered ginger
- 8 chicken thighs, skinned
- 1 tsp. red pepper
Method
- In a small bowl, mix vinegar, soy sauce, honey and ginger. Place oil in a large frying pan and heat to medium temperature. Add chicken and cook, turning, until brown on all sides, about 10 minutes. Add garlic and red pepper.
- Cook, while stirring, for 2 to 3 minutes. Add vinegar mixture. Cover and cook about 15 minutes or until chicken is fork-tender.
- Uncover and cook 1 to 2 minutes or until sauce is slightly thick. Serve with rice.
- Makes 4 servings.
