Ingredients

  • 2 1/2 c. flour, sifted
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 2 tsp. baking soda
  • 1 c. raisins
  • 1/2 c. chopped walnuts or pecans
  • 1/2 c. shortening
  • 2 c. sugar
  • 1 egg
  • 1 1/2 c. applesauce
  • 1/2 c. crushed pineapple

Method

  • Sift flour, salt, cinnamon, allspice and baking soda together. Dust raisins and nuts with a small amount of the flour mixture. Cream shortening and sugar in mixer bowl until light and fluffy. Beat in egg.
  • Add flour mixture and applesauce alternately to creamed mixture, beating well after each addition.
  • Stir in raisins, nuts and pineapple.
  • Pour in nonstick 9-inch tube pan. Bake at 350° for 1 hour.
  • Cool in pan for several minutes. Invert onto serving plate.
  • Yields 16 servings.
