Ingredients
- 4 potatoes, thinly sliced
- 3 carrots, sliced
- 1/2 c. celery, sliced
- 1 chopped onion
- 3 Tbsp. vegetable oil
- salt and pepper to taste
Method
- Place potatoes, carrots, celery and onion in oil in heavy skillet.
- Season with salt and pepper.
- Stir-fry, on medium high heat until potatoes and carrots are tender.
- Lower heat, cover and let cook for about 12 minutes more.
- Serves about 4 people.
