Ingredients

  • 1/2 c. shortening
  • 1/8 tsp. salt
  • 1 c. boiling water
  • 1 c. sifted flour
  • 4 eggs, unbeaten

Method

  • In a small sauce pan over med-high heat, add shortening and salt to boiling water and heat to boiling.
  • Reduce heat.
  • Add flour all at once and stir vigorously until mixture forms a ball around the spoon, leaving the pan clean.
  • Remove from heat.
  • Add 1 egg at a time, beating very thoroughly after each addition. Continue heating until mixture is thick and shiny and breaks from the spoon.
  • Shape on ungreased cookie sheet, using 1 teaspoon or 1 tablespoon of pastry per puff.
  • Bake in very hot oven - 450° for 20 minutes.
  • Reduce heat to 350° and bake 20 minutes longer. Cool.
  • Make slit on one side of each puff and fill with cream filling.
