Ingredients
- 2 c. all-purpose flour
- 1 c. sugar
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 2 eggs, beaten
- 1/2 c. vegetable oil
- 1/2 c. buttermilk
- 1/2 c. strawberry jam
Method
- In bowl, stir together the flour, sugar, soda, cinnamon, nutmeg and salt.
- Make a well in the center.
- Combine eggs, oil and buttermilk; pour into well.
- Stir just until moistened.
- Do not overmix.
- Gently fold in jam.
- Place in well-greased or paper lined muffin tins.
- Bake at 375° for 20 minutes.
