Ingredients

  • 2 c. all-purpose flour
  • 1 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 2 eggs, beaten
  • 1/2 c. vegetable oil
  • 1/2 c. buttermilk
  • 1/2 c. strawberry jam

Method

  • In bowl, stir together the flour, sugar, soda, cinnamon, nutmeg and salt.
  • Make a well in the center.
  • Combine eggs, oil and buttermilk; pour into well.
  • Stir just until moistened.
  • Do not overmix.
  • Gently fold in jam.
  • Place in well-greased or paper lined muffin tins.
  • Bake at 375° for 20 minutes.
