Ingredients

  • 1 1/4 lb. halibut steaks 1-inch thick or 2 chicken breasts, skinned and boned
  • 2 tsp. cooking oil
  • 3/4 c. soft bread crumbs
  • 2 Tbsp. grated Parmesan cheese
  • 1 Tbsp. snipped fresh tarragon or 1/2 tsp. dried crushed tarragon
  • 1/2 tsp. paprika
  • dash of pepper

Method

  • Cut fish into four portions.
  • Pat dry and brush with cooking oil.
  • In a shallow baking dish stir together bread crumbs, Parmesan cheese, tarragon, paprika and pepper.
  • Dip fish for chicken into crumb mixture to coat both sides.
  • Arrange pieces in a 12 x 7 1/2 x 2-inch baking dish.
  • Sprinkle any left over bread crumb mixture on top.
  • Bake fish, uncovered in a 450° oven 8 to 12 minutes or until fish flakes.
  • Test with a fork.
