Ingredients
- 1 1/4 lb. halibut steaks 1-inch thick or 2 chicken breasts, skinned and boned
- 2 tsp. cooking oil
- 3/4 c. soft bread crumbs
- 2 Tbsp. grated Parmesan cheese
- 1 Tbsp. snipped fresh tarragon or 1/2 tsp. dried crushed tarragon
- 1/2 tsp. paprika
- dash of pepper
Method
- Cut fish into four portions.
- Pat dry and brush with cooking oil.
- In a shallow baking dish stir together bread crumbs, Parmesan cheese, tarragon, paprika and pepper.
- Dip fish for chicken into crumb mixture to coat both sides.
- Arrange pieces in a 12 x 7 1/2 x 2-inch baking dish.
- Sprinkle any left over bread crumb mixture on top.
- Bake fish, uncovered in a 450° oven 8 to 12 minutes or until fish flakes.
- Test with a fork.
