Ingredients

  • 2 1/2 (10 oz.) boxes pie crust mix
  • 2 lb. beef chuck strips, cut 2 x 1-inch
  • 6 tsp. butter or margarine
  • 2 veal kidneys
  • 1 tsp. salt
  • 2 (10 3/4 oz.) cans beef broth
  • 1 pt. or can oysters
  • 1/4 lb. fresh mushrooms, sliced in half
  • 1 c. chopped onions
  • 2 tsp. parsley, chopped
  • 1/2 bay leaf, crumbled
  • 1 tsp. dried thyme
  • 1/4 tsp. pepper
  • 1 egg yolk
  • 1/4 c. flour

Method

  • Prepare pie crust as directed on the box.
  • Refrigerate.
  • Roll chuck strips in the 1/4 cup flour on waxed paper. Melt butter in hot skillet; add chuck and brown on all sides.
  • Arrange strips in a 13
  • x 9 x 2-inch baking dish.
  • Cover kidney with cold water. Let stand for 30 minutes.
