Ingredients
- 4 qt. ground cucumbers
- 2 green peppers, ground
- 2 red peppers, ground
- 4 medium sized onions, ground
- 3 Tbsp. salt
- 4 c. granulated sugar
- 2 tsp. mustard seed
- 2 tsp. celery seed
- 4 c. white vinegar
- 2 tsp. turmeric
- 1 tsp. pepper
Method
- Combine cucumbers, peppers and onions; sprinkle salt over top and let stand 3 hours.
- Drain.
- Add remaining ingredients and cook until tender on medium heat, about 30 minutes.
- Pour into hot jars and seal.
- Process in boiling water bath for 10 minutes.
- I double vinegar and spice mixture for this recipe. Makes 8 pints.
