Ingredients

  • 4 qt. ground cucumbers
  • 2 green peppers, ground
  • 2 red peppers, ground
  • 4 medium sized onions, ground
  • 3 Tbsp. salt
  • 4 c. granulated sugar
  • 2 tsp. mustard seed
  • 2 tsp. celery seed
  • 4 c. white vinegar
  • 2 tsp. turmeric
  • 1 tsp. pepper

Method

  • Combine cucumbers, peppers and onions; sprinkle salt over top and let stand 3 hours.
  • Drain.
  • Add remaining ingredients and cook until tender on medium heat, about 30 minutes.
  • Pour into hot jars and seal.
  • Process in boiling water bath for 10 minutes.
  • I double vinegar and spice mixture for this recipe. Makes 8 pints.
