Ingredients
- 1 Tbsp. melted butter or margarine
- 1 overripe banana, mashed
- 1 Tbsp. brown sugar
- pinch of salt
- 1 egg
- 1 c. flour
- 1 1/2 c. quick oats
- 1/2 tsp. baking powder
- 1/4 c. sliced almonds, toasted
- 2 c. milk
Method
- In a mixing bowl, combine melted butter, banana, brown sugar, salt, egg, flour, oats, baking powder, almonds and milk.
- Beat until well-blended and let sit for 10 minutes or more (it can be stored overnight in refrigerator).
- Batter will be thicker than normal pancake batter.
- If too thick, stir in small amount of water.
