Ingredients

  • 1 lb. fresh or frozen spinach
  • 2 or 3 strips bacon, chopped
  • 1/4 to 1/2 onion, chopped
  • 1/8 c. apple cider vinegar
  • salt and pepper to taste
  • 1/2 to 1 c. water
  • 1 to 2 tsp. sugar

Method

  • In a skillet, brown onions and bacon until cooked.
  • Then add vinegar and water and bring to a boil.
  • Add salt and pepper and 1/2 teaspoon of sugar, then taste.
  • If still sour, add 1/2 teaspoon of sugar until a mild flavor is achieved (not sweet or sour).
  • Then to this, add the fresh or frozen spinach and cook until done or heated through.
  • Serves 4.
