- 6 Tbsp. safflower oil
- 2 Tbsp. white wine vinegar
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1 garlic clove, minced
- 1/2 tsp. dried dill weed
- 1 tsp. Dijon-style mustard
- Oil and Vinegar Dressing (see following)
- 1 head curly endive
- 1 small head romaine lettuce
- 1 cucumber, peeled and sliced
- 2 medium tomatoes, cut in wedges or 1 c. cherry tomatoes, halved
- 1/2 c. whole black oil-cured olives or pitted black olives
- 2 green onions, chopped or 1/4 c. chopped red onion
- 1/4 lb. Feta cheese, cut in 1/2-inch pieces
Method
- The cheese salad, known as Salata Horiatiki, appears with wide variation throughout Greece.
