Ingredients

  • 6 Tbsp. safflower oil
  • 2 Tbsp. white wine vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1 garlic clove, minced
  • 1/2 tsp. dried dill weed
  • 1 tsp. Dijon-style mustard
  • Oil and Vinegar Dressing (see following)
  • 1 head curly endive
  • 1 small head romaine lettuce
  • 1 cucumber, peeled and sliced
  • 2 medium tomatoes, cut in wedges or 1 c. cherry tomatoes, halved
  • 1/2 c. whole black oil-cured olives or pitted black olives
  • 2 green onions, chopped or 1/4 c. chopped red onion
  • 1/4 lb. Feta cheese, cut in 1/2-inch pieces
