Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 1 small onion, chopped
  • 2 c. Pepperidge Farm stuffing (not cubed)
  • 1/2 c. Parmesan cheese
  • 4 eggs, beaten
  • 3/4 c. butter, melted
  • 1/2 tsp. thyme
  • 1/2 tsp. garlic
  • salt and pepper to taste

Method

  • Cook spinach and drain well. Mix all ingredients and chill. Roll into 1-inch balls. Freeze on tray and store in container or freezer bag. When needed, thaw and bake 15 minutes in 350° oven or until lightly brown.
