Ingredients
- 2 (10 oz.) pkg. frozen chopped spinach
- 1 small onion, chopped
- 2 c. Pepperidge Farm stuffing (not cubed)
- 1/2 c. Parmesan cheese
- 4 eggs, beaten
- 3/4 c. butter, melted
- 1/2 tsp. thyme
- 1/2 tsp. garlic
- salt and pepper to taste
Method
- Cook spinach and drain well. Mix all ingredients and chill. Roll into 1-inch balls. Freeze on tray and store in container or freezer bag. When needed, thaw and bake 15 minutes in 350° oven or until lightly brown.
