Ingredients

  • 1/2 lb. sausage (link or bulk pork sausage)
  • 1 (6 to 8 oz.) Rice-A-Roni Spanish rice
  • 2 c. hot water
  • 1 (28 oz.) can tomatoes
  • 1/4 c. chopped onions, optional
  • 1/4 c. chilies, optional

Method

  • Brown
  • sausage in
  • large
  • skillet.
  • Drain, reserving 1 tablespoon drippings
  • in
  • skillet.
  • If onions and chilies are used,
  • wilt
  • at this time. Add rice-vermicelli mix.
  • Continue cooking
  • until
  • vermicelli is
  • slightly
  • browned. Add water, contents
  • of seasoning packet and tomatoes (chopped in blender or food processor).
  • Bring to a boil. Cover; reduce heat and simmer 15 to 20 minutes or until liquid is absorbed and rice is tender.
