Ingredients
- 1/2 lb. sausage (link or bulk pork sausage)
- 1 (6 to 8 oz.) Rice-A-Roni Spanish rice
- 2 c. hot water
- 1 (28 oz.) can tomatoes
- 1/4 c. chopped onions, optional
- 1/4 c. chilies, optional
Method
- Brown
- sausage in
- large
- skillet.
- Drain, reserving 1 tablespoon drippings
- in
- skillet.
- If onions and chilies are used,
- wilt
- at this time. Add rice-vermicelli mix.
- Continue cooking
- until
- vermicelli is
- slightly
- browned. Add water, contents
- of seasoning packet and tomatoes (chopped in blender or food processor).
- Bring to a boil. Cover; reduce heat and simmer 15 to 20 minutes or until liquid is absorbed and rice is tender.
