Ingredients

  • 1 1/2 lb. raw peeled shrimp
  • 1/2 lb. fresh sliced mushrooms
  • 1/2 c. chopped green onions
  • 2 Tbsp. chopped green pepper
  • 1 Tbsp. flour
  • 1 c. sour cream
  • 2 Tbsp. pimentos
  • 1 tsp. soy sauce
  • 1 (10 oz.) pkg. chopped spinach, thawed and well drained
  • 1/2 c. grated Mozzarella cheese

Method

  • Lightly saute mushrooms, onion and peppers for 1 minute in 3 tablespoons butter.
  • Blend in flour; stir and cook 1 more minute. Remove from heat.
  • Blend all ingredients, saving enough cheese to sprinkle on top.
  • Place in a buttered casserole and sprinkle with remaining cheese.
  • Bake at 400° for 20 to 30 minutes.
