Ingredients
- 8 bell peppers, roasted
- 1/4 c. olive oil plus 1 Tbsp.
- 1 medium onion, chopped
- 2 tsp. fresh thyme
- 1/2 c. black olives, chopped
- 3/4 c. cooked rice
- 1/4 lb. mushrooms, sliced
- 1 lb. tomatoes, chopped
- 1 Tbsp. fresh basil
Method
- Roasted peppers:
- Broil 2 inches from heat.
- Turn as skin blisters and blackens, 15 to 20 minutes.
- Put in plastic bag. When cool, cut out cores and remove seeds.
