Ingredients

  • 4 medium Granny Smith apples, peeled and chopped
  • 2/3 cup dried apricots, halved
  • 1/2 cup sugar
  • 1/2 tbsp ground cinnamon
  • 6 slices white or whole wheat bread, crusts removed, cut into 3/4-inch cubes
  • 3 tbsp butter, melted
  • None None Whipped cream, to serve

Method

  • Preheat the oven to 350°F.
  • Combine the apple, dried apricots and 1/2 cup water in a large saucepan. Bring to a boil. Reduce the heat to low; cook, covered, for 15 mins until the fruit is softened. Remove from the heat. Stir in 2 tbsp of the sugar. Combine the remaining sugar with the cinnamon.
  • Divide the fruit mixture into 4 small baking dishes.
  • Toss the bread cubes with the melted butter and cinnamon sugar mixture. Spoon evenly over the fruit in dishes.
  • Bake for 20 mins or until the bread topping is golden. Serve the puddings warm with whipped cream.
