Ingredients

  • 2 lb. ground chuck
  • 1/2 c. chopped onion
  • 1/2 c. green pepper
  • 1 pkg. chili seasoning mix
  • 1 lb. 12 oz. can tomatoes
  • 1 c. shredded Cheddar cheese
  • 1 c. shredded Mozzarella cheese
  • 1/2 c. sliced ripe olives
  • 1 pkg. corn bread mix, prepared

Method

  • In skillet, brown ground chuck. Add chopped onion and green pepper; saute.
  • Add chili seasoning mix and tomatoes.
  • Simmer 15 minutes.
  • Remove from heat; stir in shredded cheeses and olives. Turn into 9-inch square dish.
  • Prepare the corn bread mix according to directions. Arrange spoonfuls on top.
  • (Extra can be made into muffins.)
  • Bake in preheated 425° oven for 15 to 20 minutes.
  • Let stand for 10 minutes before serving.
