- 2 lb. ground chuck
- 1/2 c. chopped onion
- 1/2 c. green pepper
- 1 pkg. chili seasoning mix
- 1 lb. 12 oz. can tomatoes
- 1 c. shredded Cheddar cheese
- 1 c. shredded Mozzarella cheese
- 1/2 c. sliced ripe olives
- 1 pkg. corn bread mix, prepared
Method
- In skillet, brown ground chuck. Add chopped onion and green pepper; saute.
- Add chili seasoning mix and tomatoes.
- Simmer 15 minutes.
- Remove from heat; stir in shredded cheeses and olives. Turn into 9-inch square dish.
- Prepare the corn bread mix according to directions. Arrange spoonfuls on top.
- (Extra can be made into muffins.)
- Bake in preheated 425° oven for 15 to 20 minutes.
- Let stand for 10 minutes before serving.
