- 1 baked potato peeled, roughly mashed
- 15 ounces tuna drained, flaked
- 1 zucchini grated
- 1 carrot grated
- 1/4 cup cheddar cheese grated
- 2 tablespoons fresh parsley chopped
- 1 tablespoon lemon juice
- 1 cup breadcrumbs
- 1 tablespoon olive oil
- green beans to serve
- lemon wedges to serve
Method
- Combine potato, tuna, zucchini, carrot, cheese, parsley and lemon juice. Season. Shape into 10 patties, coat in breadcrumbs then chill for 20 mins.
- Heat oil in a large frying pan over medium heat. Working in batches, cook patties for 3-5 mins per side, until golden. Drain on paper towels. Serve with green beans and lemon wedges.
