Ingredients

  • 1 baked potato peeled, roughly mashed
  • 15 ounces tuna drained, flaked
  • 1 zucchini grated
  • 1 carrot grated
  • 1/4 cup cheddar cheese grated
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice
  • 1 cup breadcrumbs
  • 1 tablespoon olive oil
  • green beans to serve
  • lemon wedges to serve

Method

  • Combine potato, tuna, zucchini, carrot, cheese, parsley and lemon juice. Season. Shape into 10 patties, coat in breadcrumbs then chill for 20 mins.
  • Heat oil in a large frying pan over medium heat. Working in batches, cook patties for 3-5 mins per side, until golden. Drain on paper towels. Serve with green beans and lemon wedges.
