Ingredients
- 1 onion, chopped
- 1 large eggplant, peeled and chopped (several zucchini may be substituted for the eggplant, do not peel)
- 2 tomatoes, chopped
- salt and pepper to taste
- 1/4 c. oil
- 3 slices bacon
- 1/2 c. cheese (your favorite)
- 1/2 c. milk
- 1 egg
- nutmeg to taste
Method
- Saute onions, eggplant
- (or zucchini) and tomatoes with salt and pepper in oil
- over medium heat; do not brown.
- Layer half the eggplant
- mixture,
- bacon,
- and remaining eggplant in deep baking dish.
- Combine cheese, milk and egg in bowl.
- Beat until smooth. Add
- nutmeg
- to
- taste.
- Pour
- over
- casserole. Bake at 400° for 30 to 45 minutes.
