Ingredients

  • 1 onion, chopped
  • 1 large eggplant, peeled and chopped (several zucchini may be substituted for the eggplant, do not peel)
  • 2 tomatoes, chopped
  • salt and pepper to taste
  • 1/4 c. oil
  • 3 slices bacon
  • 1/2 c. cheese (your favorite)
  • 1/2 c. milk
  • 1 egg
  • nutmeg to taste

Method

  • Saute onions, eggplant
  • (or zucchini) and tomatoes with salt and pepper in oil
  • over medium heat; do not brown.
  • Layer half the eggplant
  • mixture,
  • bacon,
  • and remaining eggplant in deep baking dish.
  • Combine cheese, milk and egg in bowl.
  • Beat until smooth. Add
  • nutmeg
  • to
  • taste.
  • Pour
  • over
  • casserole. Bake at 400° for 30 to 45 minutes.
