Ingredients
- 2 lb. 10 oz. can sweet potatoes or yams
- 3/4 stick butter or margarine
- 8 Tbsp. evaporated milk
- 1 c. brown sugar
- 3/4 c. pecans, chopped
Method
- Drain sweet potatoes, then microwave sweet potatoes and butter in a bowl until soft enough to mash. Add 4 tablespoons evaporated milk.
- Mix well with mixer and place in small casserole dish. Place remaining milk and butter along with brown sugar and pecans in a pan and bring to a boil.
- Pour over the potatoes.
- Bake at 350° for 30 to 40 minutes.
