Ingredients

  • 2 c. sugar
  • 1 Tbsp. all-purpose flour
  • 1 Tbsp. cornmeal
  • 4 eggs
  • 4 Tbsp. butter, melted
  • 3 to 4 Tbsp. freshly squeezed lemon juice
  • 1 tsp. grated lemon peel
  • 1/4 c. milk
  • 1 basic (9-inch) pie crust, unbaked

Method

  • Preheat the oven to 350°.
  • In a large mixing bowl, combine the sugar, flour and cornmeal.
  • Stir to mix.
  • Add the eggs.
  • Beat well.
  • Add the butter, lemon juice, lemon peel and milk.
  • Beat well.
  • Pour the filling into the unbaked pie crust.
  • Bake for 50 to 55 minutes until the filling is set in the center and the top is golden brown.
  • Remove from the oven and cool before slicing.
