Ingredients
- 2 c. sugar
- 1 Tbsp. all-purpose flour
- 1 Tbsp. cornmeal
- 4 eggs
- 4 Tbsp. butter, melted
- 3 to 4 Tbsp. freshly squeezed lemon juice
- 1 tsp. grated lemon peel
- 1/4 c. milk
- 1 basic (9-inch) pie crust, unbaked
Method
- Preheat the oven to 350°.
- In a large mixing bowl, combine the sugar, flour and cornmeal.
- Stir to mix.
- Add the eggs.
- Beat well.
- Add the butter, lemon juice, lemon peel and milk.
- Beat well.
- Pour the filling into the unbaked pie crust.
- Bake for 50 to 55 minutes until the filling is set in the center and the top is golden brown.
- Remove from the oven and cool before slicing.
