Ingredients

  • 1 pkg. None Such mincemeat
  • 1 1/2 c. water
  • 2 1/2 c. sifted flour
  • 1 tsp. baking soda
  • 2 eggs, lightly beaten
  • 1 1/2 c. (13 oz.) Eagle Brand milk
  • 2 c. (1 lb. jar) candied fruit and peels
  • 1 c. walnuts, coarsely chopped

Method

  • Break mincemeat into chunks in a medium size saucepan; add water.
  • Stir over medium heat until lumps are broken up.
  • Boil 1 minute; stir occasionally.
  • Cool.
  • Butter a 9-inch tube pan or spring pan.
  • Line with wax paper and butter again.
  • Sift flour and baking soda.
  • Combine eggs, mincemeat, condensed milk, fruit and nuts.
  • Fold in dry ingredients.
  • Pour in pan; bake slow at 300° for 2 hours plus, until center springs back when lightly touched with finger and top is golden brown.
  • Turn out of pan.
  • Remove paper. For a richer cake, use two packages of mincemeat quantities of water and other ingredients stay the same.
  • It makes a big cake and so-so-so good.
  • Serves 12.
