Ingredients
- 4 c. diced potatoes
- 1/2 c. minced onion
- 1 tsp. salt
- 1 tsp. pepper
- 1 c. grated cheese (Velveeta)
- 2 c. medium white sauce
- 1/2 c. cracker crumbs
- 2 tsp. butter
Method
- Cover potatoes, onion and salt with boiling water and cook 5 minutes.
- Place in small greased casserole.
- Add pepper and cheese to white sauce.
- Pour over potatoes. Top with crumbs.
- Dot with butter.
- Bake at 350° until brown, about 30 minutes.
- Yield: 4 to 6 servings.
