Ingredients
- 1 1/2 c. sugar
- 2 Tbsp. oleo
- 2 lemons (juice and rind)
- 3 eggs (reserve whites)
Method
- Beat egg yolks until lemon colored.
- Add sugar.
- Grate lemon rind into this.
- Add lemons (juice and rind) and oleo to eggs and sugar.
- Pour into unbaked pie crust.
- Beat egg whites stiff for meringue.
- Bake at 325° until almost set.
- Spread meringue on top of pie and brown.
