- 1 bunch Scallions
- 35 Shrimp
- 4 cup Cooked white rice
- 1 can Diced tomatoes with green chiles
- 1 can Black beans
- 4 tbsp Olive oil
- 2 tbsp Chili powder
- 1 tsp Cumin
- 2 tsp Red pepper flakes
- 1 tsp Crushed garlic
- 1 Lime
- 1 Salt and pepper to taste
- 1/2 tsp Oregano
Method
- SautAS shrimp and scallions in olive oil, garlic and juice of the lime until shrimp are cooked and scallions are slightly wilted.
- Add chili flakes and cook for about a minute.
- Add chili powder, cumin, and oregano and stir into mixture creating a sauce.
- Add tomatoes and beans.
- Simmer for about 5-10 minutes.
- Add rice.
- Add salt and pepper to taste.
