Ingredients

  • 1 bunch Scallions
  • 35 Shrimp
  • 4 cup Cooked white rice
  • 1 can Diced tomatoes with green chiles
  • 1 can Black beans
  • 4 tbsp Olive oil
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 2 tsp Red pepper flakes
  • 1 tsp Crushed garlic
  • 1 Lime
  • 1 Salt and pepper to taste
  • 1/2 tsp Oregano

Method

  • SautAS shrimp and scallions in olive oil, garlic and juice of the lime until shrimp are cooked and scallions are slightly wilted.
  • Add chili flakes and cook for about a minute.
  • Add chili powder, cumin, and oregano and stir into mixture creating a sauce.
  • Add tomatoes and beans.
  • Simmer for about 5-10 minutes.
  • Add rice.
  • Add salt and pepper to taste.
