Ingredients
- 1 lb. fresh pole beans
- 2 Tbsp. olive oil
- 1 small clove garlic
- 1 Tbsp. chopped onion
- 1 tsp. salt
- 1 tsp. basil leaves
- 1/2 tsp. sugar
- 1/4 c. boiling water
Method
- Remove tips from beans and cut in half.
- Heat oil in saucepan. Peel garlic and cook in hot oil until golden.
- Remove garlic and discard.
- Add onion.
- Cook slowly for 3 minutes.
- Add beans, salt, basil, sugar and water.
- Cover and cook slowly for 15 minutes or until beans are crisp-tender.
- Serve hot.
- Yields 6 servings.
