Ingredients

  • 1 lb. fresh pole beans
  • 2 Tbsp. olive oil
  • 1 small clove garlic
  • 1 Tbsp. chopped onion
  • 1 tsp. salt
  • 1 tsp. basil leaves
  • 1/2 tsp. sugar
  • 1/4 c. boiling water

Method

  • Remove tips from beans and cut in half.
  • Heat oil in saucepan. Peel garlic and cook in hot oil until golden.
  • Remove garlic and discard.
  • Add onion.
  • Cook slowly for 3 minutes.
  • Add beans, salt, basil, sugar and water.
  • Cover and cook slowly for 15 minutes or until beans are crisp-tender.
  • Serve hot.
  • Yields 6 servings.
