Ingredients
- 1 large (7 oz.) can diced Ortega chilies
- 3 medium zucchini, sliced thinly
- 1 1/2 c. grated Monterey Jack cheese
- 1 egg
- 2/3 c. milk
- 1/3 c. Bisquick
Method
- Grease an 8 x 8-inch pan.
- Layer Ortega chilies, zucchini and cheese.
- Repeat 3 times.
- Beat eggs, milk, salt and pepper to taste.
- Add Bisquick to egg mix.
- Mix well.
- Pour over zucchini. Bake at 350° for 1 hour.
- Place in 9 x 13-inch pan.
