Ingredients

  • 3/4 to 1 lb. hot sausage, sliced in 1/2-inch pieces
  • 3/4 to 1 lb. mild sausage, sliced in 1/2-inch pieces
  • 2 green peppers, chopped
  • 1 medium onion, chopped
  • 1 3/4 c. cooking wine
  • 4 c. beef broth
  • 1 bay leaf
  • 1 clove garlic, minced
  • 1 tsp. basil
  • 2 Tbsp. parsley
  • 1 tsp. oregano
  • 1 qt. jar tomatoes
  • 8 oz. bow tie noodles
  • Parmesan cheese

Method

  • Saute sausage.
  • Remove excess drippings and sausage.
  • Fry green peppers and onion.
  • Add sausage, wine and broth.
  • Boil until wine smell is gone (about 15 minutes).
  • Add seasonings, tomatoes and dry noodles.
  • Simmer 1 hour.
  • Sprinkle with Parmesan cheese before serving.
  • Serves 8.
