Ingredients

  • 2 (10 oz.) pkg. frozen broccoli or 2 heads fresh
  • 2 to 4 whole chicken breasts, cooked and boned
  • 2 cans cream of chicken soup
  • 1 c. mayo
  • 1 tsp. lemon juice
  • 1/2 tsp. curry powder
  • 1/2 c. shredded sharp Cheddar cheese
  • 3 slices bread, cut in cubes and sauteed in 2 Tbsp. melted margarine

Method

  • Cook broccoli until tender.
  • Drain.
  • Arrange in greased 13 x 9 x 2-inch pan (or Pam spray).
  • Place chicken on top.
  • Combine soup, mayo, lemon juice and curry powder.
  • Pour over chicken.
  • Sprinkle with cheese, then top with bread cubes.
  • Bake, uncovered, at 350° for 25 to 30 minutes.
  • Serves 4.
