Ingredients
- 2 c. hard cooked elbow or possibly shell macaroni
- 1/4 c. low calorie or possibly Lite French dressing
- 1 c. cottage cheese (no fat, no cholesterol, Axelrod brand)
- 1/4 c. diced green pepper
- 2 tbsp. finely minced onion
- 1/4 c. diced pimento
- 2 tbsp. minced parsley
Method
- Rinse and drain macaroni.
- Combine macaroni and French dressing.
- Marinate a few min.
- Add in remaining ingredients.
- Mix gently but thoroughly.
- Garnish with watercress or possibly minced olives, if you like.
- Serves 6.
