Ingredients

  • 2 c. hard cooked elbow or possibly shell macaroni
  • 1/4 c. low calorie or possibly Lite French dressing
  • 1 c. cottage cheese (no fat, no cholesterol, Axelrod brand)
  • 1/4 c. diced green pepper
  • 2 tbsp. finely minced onion
  • 1/4 c. diced pimento
  • 2 tbsp. minced parsley

Method

  • Rinse and drain macaroni.
  • Combine macaroni and French dressing.
  • Marinate a few min.
  • Add in remaining ingredients.
  • Mix gently but thoroughly.
  • Garnish with watercress or possibly minced olives, if you like.
  • Serves 6.
