- 1 lb. ground beef
- 1 c. chopped onions
- 1 c. cubed potatoes
- 1 c. sliced carrots
- 1 c. shredded cabbage
- 1 small bay leaf
- 1 c. chopped tomatoes
- 1/2 tsp. thyme
- 1/4 tsp. basil
- 1 tsp. salt (optional)
- 1/8 tsp. pepper
- 1 1/2 qt. water
- 1 c. cubed Cheddar cheese
Method
- Saute beef until pink disappears and add onion.
- Pour off excess fat.
- Add remainder of ingredients (not cheese) and simmer for 1 hour.
- Place a few cubes of cheese in serving bowl before pouring in soup.
