Ingredients
- 1 lb. hot sausage
- 1 onion
- 2 cans black-eyed peas
- 1 c. water
- 1 can tomatoes
- hot pepper sauce
- 6 to 8 c. cooked rice
Method
- Brown sausage, crumbling with a fork.
- Saute onion and add to sausage.
- Add peas, water, tomatoes and sauce.
- Cover and simmer for 20 to 30 minutes.
- Serve hot over rice.
