Ingredients

  • 2 cups Broccoli Flowers
  • 1 whole Carrot, Cut In Matchsticks
  • 1 strip Celery, Cut In Matchsticks
  • 1 Tablespoon Fresh Ginger, Minced

  • FOR THE DRESSING:
  • 2 Tablespoons Fresh Lemon Juice
  • 2 Tablespoons Soy Sauce (unpasteurized If Possible)
  • 2 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Agave Nectar
  • 1 pinch Salt
  • 2 Tablespoons Peanut Butter (or Almond Butter Or Tahini)
  • 2 Tablespoons Peanuts For Garnish (depending On Nut Butter That You Use)

Method

  • Mix the cut vegetables together in a bowl.
  • In another bowl, whisk the dressing ingredients together until well blended.
  • Pour the dressing over the salad and stir well.
  • Allow to sit covered, in your fridge, for 30-60 minutes, stirring occasionally.
  • Garnish with roasted peanuts and serve.
