Ingredients

  • 2 large eggplant
  • 2 eggs
  • 1 tsp. baking powder
  • 1/2 stick butter or margarine
  • 2 c. Italian bread crumbs
  • 1/2 c. flour
  • dash of sugar
  • 1/2 c. sweet milk

Method

  • Peel the eggplant and slice them up.
  • Then place them in large bowl, fill bowl with water and put 1/2 teaspoon salt in water to keep the eggplant from turning dark.
  • Let stand for 3 minutes, then drain off.
  • Place the eggplant in pot, boil on medium heat until tender.
  • Mash them up.
  • Add the ingredients in, mix well with spoon.
  • Make small patties, place in skillet in hot fat at 275°.
  • Fry until golden brown.
  • Serve while warm.
