Ingredients
- 2 lb. white fish fillets
- 8 slices Cheddar cheese
- 1 tsp. thyme or oregano
- 1/4 c. parsley
- 1 c. chopped onion
- 2 Tbsp. vegetable oil
- 2 Tbsp. flour
- 1 tsp. salt
- dash of pepper
- 1 c. milk
Method
- Place half of fish fillets in a greased 9 x 9-inch shallow baking dish.
- Cover with 4 slices of cheese.
- Repeat.
- Sprinkle with thyme and parsley.
- Saute onion in oil over medium heat until lightly browned.
- Blend in flour, salt and pepper.
- Gradually stir in milk.
- Bring to a boil over low heat, stirring constantly. Boil 1 minute and pour over fish.
- Bake at 400° for 20 to 30 minutes.
- Makes 6 to 8 servings.
