Ingredients

  • 2 lb. white fish fillets
  • 8 slices Cheddar cheese
  • 1 tsp. thyme or oregano
  • 1/4 c. parsley
  • 1 c. chopped onion
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. flour
  • 1 tsp. salt
  • dash of pepper
  • 1 c. milk

Method

  • Place half of fish fillets in a greased 9 x 9-inch shallow baking dish.
  • Cover with 4 slices of cheese.
  • Repeat.
  • Sprinkle with thyme and parsley.
  • Saute onion in oil over medium heat until lightly browned.
  • Blend in flour, salt and pepper.
  • Gradually stir in milk.
  • Bring to a boil over low heat, stirring constantly. Boil 1 minute and pour over fish.
  • Bake at 400° for 20 to 30 minutes.
  • Makes 6 to 8 servings.
