Ingredients

  • 1 bunch broccoli
  • 1 to 2 potatoes
  • 1 onion
  • 1 clove garlic
  • 3/4 tsp. curry powder
  • 2 Tbsp. butter
  • 1 can chicken broth
  • 1 c. water
  • 1/2 tsp. salt
  • 1 c. half and half (could use 1% or 2 % milk)

Method

  • Trim broccoli and pare stems.
  • Separate flowerets.
  • Cut stems into 1/2-inch slices.
  • Cut potatoes in 1/2-inch cubes.
  • Saute onion and garlic in butter in a kettle until tender, about 3 minutes.
  • Add curry powder, chicken broth, water and salt to kettle.
  • Bring to boil and add broccoli and potatoes.
  • Return to boiling.
  • Lower heat.
  • Cover.
  • Simmer 20 minutes.
  • Puree mixture in blender and stir in half and half.
