Ingredients

  • 1 (3 lb.) fryer
  • 1/2 tsp. pepper
  • 2 qt. water
  • 1 stalk celery
  • 1 tsp. salt
  • 1 medium onion
  • 1 (16 oz.) pkg. frozen mixed vegetables
  • 1/2 c. butter
  • 1 1/2 tsp. salt
  • 2 hard-cooked eggs
  • 2 large potatoes, cubed
  • 1/2 c. flour
  • 1 c. milk
  • 1 1/4 tsp. pepper
  • 1 (9-inch) refrigerated pie crust

Method

  • Combine first 6 ingredients in large Dutch oven.
  • Bring to boil.
  • Cover and reduce heat; simmer until tender.
  • Remove chicken, reserving broth in Dutch oven.
  • Discard vegetables.
  • Let chicken cool.
  • Skin, bone and cut into bite sized pieces.
  • Skim fat from broth.
  • Bring broth to boil.
  • Add frozen vegetables and potatoes.
  • Simmer until tender.
  • Remove vegetables from broth. Measure 3 cups broth and set aside.
