Ingredients
- 1 1/2 lb. fresh broccoli
- 2 Tbsp. butter
- 1 c. sliced, fresh mushrooms
- 2 tsp. grated onion
- 2 Tbsp. whole wheat flour
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 c. milk
- 3/4 to 1 c. grated sharp Cheddar cheese
- paprika
Method
- Cook broccoli until tender.
- Cut into 2-inch pieces.
- Melt butter over low heat in a saucepan.
- Saute mushrooms and onion in butter 5 minutes.
- Blend in flour and seasonings.
- Cook over low heat, stirring until mixture is smooth and bubbly.
- Remove from heat.
- Stir in milk.
- Bring to a boil, stirring constantly, for 1 minute.
- Spread broccoli in 1-quart casserole.
- Pour mushroom sauce over broccoli.
- Sprinkle with cheese and paprika.
- Bake in a 350° oven for 20 minutes or until tender and golden brown.
