Ingredients

  • 1 1/2 lb. fresh broccoli
  • 2 Tbsp. butter
  • 1 c. sliced, fresh mushrooms
  • 2 tsp. grated onion
  • 2 Tbsp. whole wheat flour
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. milk
  • 3/4 to 1 c. grated sharp Cheddar cheese
  • paprika

Method

  • Cook broccoli until tender.
  • Cut into 2-inch pieces.
  • Melt butter over low heat in a saucepan.
  • Saute mushrooms and onion in butter 5 minutes.
  • Blend in flour and seasonings.
  • Cook over low heat, stirring until mixture is smooth and bubbly.
  • Remove from heat.
  • Stir in milk.
  • Bring to a boil, stirring constantly, for 1 minute.
  • Spread broccoli in 1-quart casserole.
  • Pour mushroom sauce over broccoli.
  • Sprinkle with cheese and paprika.
  • Bake in a 350° oven for 20 minutes or until tender and golden brown.
