Ingredients

  • 1 cup cherry tomatoes
  • 14 ounces artichoke hearts drained and quartered
  • 2 cloves garlic finely chopped
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons promise buttery spread
  • 1/2 teaspoon dri oregano leaves, crush
  • 1/4 teaspoon ground black pepper
  • 1 pound boneless skinless chicken breast halves

Method

  • Preheat oven to 400°.
  • Toss tomatoes, artichokes, garlic, vinegar and 1 tablespoon Promise(R) Buttery Spread in 13 x 9-inch roasting pan; set aside.
  • Blend remaining 1 tablespoon Spread, oregano and pepper in small bowl. Evenly spread on tops of chicken, then arrange chicken on tomato mixture. Roast 25 minutes or until chicken is thoroughly cooked.
