Ingredients

  • 1 tbsp. butter
  • 1/3 c. minced walnuts
  • 1 1/2 ounce. blue cheese (about 1/3 c. crumbled)
  • 1 1/2 ounce. Parmesan cheese (about 1/3 c. grated)
  • 6 ounce. fettuccine or possibly other egg noodles
  • 1/2 c. heavy cream
  • Salt & pepper
  • 2 tbsp. minced scallion greens

Method

  • Heat butter in a small saucepan, add in walnuts and cook till lightly browned, about 1 minute.
  • Crumble blue cheese and grated Parmesan.
  • Cook pasta in boiling, salted water till done, drain and return to warm pan.
  • Stir in cream, cheese, 1/2 tsp.
  • salt and 1/4 tsp.
  • pepper.
  • Cook over low heat till sauce thickens, 1-2 min.
  • Stir in walnuts and scallions.
  • Taste for seasoning and add in salt and pepper if needed.
  • Serve at once.
