Ingredients
- 4 c. 1-inch pieces rhubarb (about 1 lb.)
- 3/4 to 1 c. sugar
- 2 Tbsp. water
- 1 c. strawberry halves
Method
- Mix rhubarb, sugar and water in a 2-quart casserole.
- Cover tightly and microwave on High 8 to 10 minutes, stirring after 5 minutes, until rhubarb is tender and slightly transparent.
- Stir in strawberries.
- Serve warm or cold.
- Makes 6 servings (115 calories per serving).
