Ingredients

  • 2/3 lb dried pasta
  • 2/3 cup sour cream
  • 3/4 cup mayonnaise
  • 2-3 tbsp lemon juice
  • 2 oz capers, chopped, plus extra to garnish
  • 1 - 7 oz can tuna, drained
  • 3 3/4 cup arugula
  • 2-3 sprigs fresh mint, leaves picked
  • 4 None green olives, to garnish

Method

  • Cook pasta according to package instructions. Drain.
  • Meanwhile, mix sour cream, mayonnaise, lemon juice and chopped capers. Season. Toss with cooked pasta then add tuna.
  • To serve, divide pasta between 4 bowls. Mix arugula and mint then distribute over pasta. Garnish with extra capers and green olives.
