Ingredients
- 2/3 lb dried pasta
- 2/3 cup sour cream
- 3/4 cup mayonnaise
- 2-3 tbsp lemon juice
- 2 oz capers, chopped, plus extra to garnish
- 1 - 7 oz can tuna, drained
- 3 3/4 cup arugula
- 2-3 sprigs fresh mint, leaves picked
- 4 None green olives, to garnish
Method
- Cook pasta according to package instructions. Drain.
- Meanwhile, mix sour cream, mayonnaise, lemon juice and chopped capers. Season. Toss with cooked pasta then add tuna.
- To serve, divide pasta between 4 bowls. Mix arugula and mint then distribute over pasta. Garnish with extra capers and green olives.
