Ingredients
- 1-1/2 lb. assorted mushrooms
- 2 onions
- 1-1/3 tbsp. oil
- 8-7/8 oz. goat cheese
- Red wine vinegar
- Puff pastry
- Basil, for garnish
- 1 egg whisked lightly with
- 1 tbsp. milk
Method
- Heat red wine vinegar in pot; add onions and reduce until caramelized.
- Spray flat tray with cooking oil and place one sheet of puff pastry, Score a line roughly 2 cm.
- along the inside of pastry sheet.
- Cook in moderate oven (350F) for 10 minutes.
- Remove from oven.
- Remove caremalised onions from pot and spread evenly over puff pastry, layer mushrooms over onions.
- Spread goat cheese over the top and cook in a moderate oven (350F) for 20 minutes or until the goat cheese has started to slightly melt.
- To give the pastry a nice brown colour, brush with an egg wash lightly before placing back into oven.
- Remove tart from oven, slice into sections and serve with crusty bread and salad.
- We had a white wine with this, but even a nice smooth red would be perfect.
