Ingredients

  • 1-1/2 lb. assorted mushrooms
  • 2 onions
  • 1-1/3 tbsp. oil
  • 8-7/8 oz. goat cheese
  • Red wine vinegar
  • Puff pastry
  • Basil, for garnish
  • 1 egg whisked lightly with
  • 1 tbsp. milk

Method

  • Heat red wine vinegar in pot; add onions and reduce until caramelized.
  • Spray flat tray with cooking oil and place one sheet of puff pastry, Score a line roughly 2 cm.
  • along the inside of pastry sheet.
  • Cook in moderate oven (350F) for 10 minutes.
  • Remove from oven.
  • Remove caremalised onions from pot and spread evenly over puff pastry, layer mushrooms over onions.
  • Spread goat cheese over the top and cook in a moderate oven (350F) for 20 minutes or until the goat cheese has started to slightly melt.
  • To give the pastry a nice brown colour, brush with an egg wash lightly before placing back into oven.
  • Remove tart from oven, slice into sections and serve with crusty bread and salad.
  • We had a white wine with this, but even a nice smooth red would be perfect.
